Day One: eat as much as you can slathered in butter, dipped in chowder, or dredged in a ragu.
Day Two: sandwiches and open-faced toasts.
Day Three: Winter Panzanella.
Day Four: breadcrumbs, baby.
How to:
Cube bread.
Air-dry cubes and whatever herbs your have lying around.
Blitz in blender or food processor and store in air-tight container.
STOCKED Tip: Do not listen to anyone about how to keep bread crusty with wax wraps or crazy products. Put it in the refrigerator wrapped in a cloth and never in a plastic bag or anything that will make it too moist. Your best bet (until we get to the crouton or breadcrumb stage) is to toast it as you go to help it regain its crust.
